Ingredients & Directions
                
     2 c  Mayonnaise
     2    Italian plum tomatoes;
          -peeled and diced
     1    Blanched ear of corn;
          -kernels only
     1    Green onion; finely chopped
     1 ts Bayou Blast; see * Note
     1    Jalapeno pepper; seeded and
          -diced
     1 ts Salt
          Freshly-ground black pepper
 * Note: see the “Bayou Blast – {Emeril’s Creole Seasoning}” recipe
 which is included in this collection.
 In a small bowl combine all ingredients; season with salt and 10 turns
 black pepper. This recipe yields about 3 cups of Creole tartar sauce.
