Nonstick cooking spray              1 ea Egg
 1 3/4 c  Unsifted all-purpose flour          1 t  Vanilla
     1 T  Ground cinnamon                   1/2 c  Buttermilk
     2 t  Baking powder                     1/2 c  Applesauce, unsweetened
   1/4 t  Baking soda                         1 c  Apple, unpeeled, cored,
     3 T  Butter                                   -chopped
   3/4 c  Light brown sugar              
 Preheat oven to 375.  Greased 9×1 1/2 inch round cake pan with
 nonstick cooking spray.  Line bottom of pan with 9-inch round cut
 from waxed paper; greased waxed paper with nonstick cooking spray. In
 medium bowl, combine flour, ground cinnamon, baking powder, baking
 soda, and sal; mix well. In large bowl combine butter, egg, brown
 sugar and vanilla. With electric mixer at high speed, beat butter
 mixture 2 minutes or until light and fluffy.  Add buttermilk and
 applesauce; beat until blended and smooth. With electric.mixer at
 medium speed, beat in flour mixture just until dry ingredients are
 moistened and batter is smooth.  With wooden spoon, stir in chopped
 apple.  Spread batter evenly in prepared pan. Bake 35 to 40 minutes
 or until wooden pick inserted in center comes out clean and cake
 pulls away from pan sides.  Cool in pan on wire rack 10 minutes. Turn
 out onto rack; remove waxed paper.  Invert; cool completely.
